Spicy Pork Ribs with Beans

Ingredients

  • 1 1/2 to 2 lbs. country-style pork ribs
  • 3 large onions, sliced
  • 2 cups chicken broth
  • 1 can whole tomatoes with juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 to 4 tsp chili powder, to taste
  • 1 can pinto beans, drained
  • 1 can white hominy, drained
  • 1 avocado, peeled, diced
  • 2 tbsp cilantro
  • 2 tbsp parsley, chopped

Preparation

Cut pork into 2 inch pieces. Place in dutch oven. Cook over high heat till brown. Drain fat. Add onions, broth, tomatoes, garlic and cilantro. Bring to a boil. Reduce heat. Simmer uncovered 1 hour, stirring occasionally. Add salt and chili powder. Simmer 1 more hour. Stir in beans and hominy. Stir to heat through. Serve topped with avocado and parsley. Good served with heated flour tortillas dipped in the broth.
