Honey Walnut Shrimp
Prep time: 30 minutes
Skillet or deep fryer
- 1 cup walnuts
- 2 tbsp. sugar
- 1 Tbp. butter
- 1 cup vegetable oil, for frying
- 1 pound large shrimp, peeled and deveined
- sliced green onions for garnish (optional)
- 3 tbsp. mayonnaise
- 1 t. honey
- 1/2 tbsp. lemon juice
- 2 tbsp. sweetened condensed milk
- 1 cup flour
- 1/2 tsp. salt
- 1 tsp sugar
- 1 cup water
PreparationPlace the butter in a small saucepan and heat on medium-low until melted. Add walnuts and stir until they are completely coated with butter. Turn heat on high and cook them for 1 minute, stirring constantly. Turn heat to medium and add the sugar while stirring to coat walnuts. Cook another minute. Set aside to cool.
In a serving bowl whisk together all ingredients for the sauce and set aside.
Heat the oil in a heavy deep skillet over medium high heat or deep fryer. In a large bowl mix all ingredients for the batter. Add the shrimp and stir to coat. Fry the shrimp in batches for about 5 minutes or until the outside is golden brown. Do not overcrowd. Remove with a slotted spoon and drain on a paper towel.
Add the shrimp to the bowl with the sauce. Add the candied walnuts and green onions, if desired. Serve with rice.
