Honey Walnut Shrimp

Skillet or deep fryer


  • 1 cup walnuts
  • 2 tbsp. sugar
  • 1 Tbp. butter
  • 1 cup vegetable oil, for frying
  • 1 pound large shrimp, peeled and deveined
  • sliced green onions for garnish (optional)


  • 3 tbsp. mayonnaise
  • 1 t. honey
  • 1/2 tbsp. lemon juice
  • 2 tbsp. sweetened condensed milk


  • 1 cup flour
  • 1/2 tsp. salt
  • 1 tsp sugar
  • 1 cup water


Place the butter in a small saucepan and heat on medium-low until melted. Add walnuts and stir until they are completely coated with butter. Turn heat on high and cook them for 1 minute, stirring constantly. Turn heat to medium and add the sugar while stirring to coat walnuts. Cook another minute. Set aside to cool.

In a serving bowl whisk together all ingredients for the sauce and set aside.

Heat the oil in a heavy deep skillet over medium high heat or deep fryer. In a large bowl mix all ingredients for the batter. Add the shrimp and stir to coat. Fry the shrimp in batches for about 5 minutes or until the outside is golden brown. Do not overcrowd. Remove with a slotted spoon and drain on a paper towel.

Add the shrimp to the bowl with the sauce. Add the candied walnuts and green onions, if desired. Serve with rice.
